BEEF KI YAKHNI
Beef’s bones, 1 kg
Water, 4 liters
(For stock take a pot add water, beef bones and cook it for 1 to 1.5 hours).
HALEEM MAKING
STEP # 1
National Daigi Denedar Haleem Masala ( grains) 1 Packet
Water 3 liters
METHOD
1. Wash grains and soak them for at least 2 hours in water. Now add grains in strainer and wash once again with clean water.
2. Now add grains and 3 liters water in a pot and cook until grains are completely tender. Once they are done, blend grains in the blender.

Serve hot garnished with fried onions, ginger julienne, finely chopped coriander, green chili slices.

Ingredients:
CHICKEN & POTATO MIXTURE
Chicken Boiled & Shredded 1 Cup
Potato Boiled & Mashed 1 Cup
National Chicken Tikka Masala 1 & ½ Tsp
Chicken Powder 1 Teaspoon
Cheddar Cheese 150gm To 160gm (10gm Each)
Coating:
Flour (Maida) As Per Required
Eggs 2 To 3
National Salt, To Taste
Breadcrumbs As Per Required
Oil For Deep Frying

METHOD

1. Peel potatoes and boil them until soft and then mash.
2. Now boil chicken until gets tender now shred chicken.
3. Take a bowl put shredded chicken, mashed potatoes, chicken powder, and National Chicken Tikka Masala. Mix well to make the perfect mixture.
4. Take 30gm potato and chicken mixture now keep 10-gram cheese cube on the mixture and cover it with the mixture and make round balls with the help of hands.
5. Now beat eggs in the bowl and add National salt to taste.
6. Add flour in the second bowl and breadcrumbs in the third bowl.
7. Coat all chicken cheese balls with flour then dip in eggs and coat with breadcrumbs.
8. Heat oil in a wok and deep fry on low flame for 5 to 6 minutes or until turn into nice golden color.
Serve with National Tomato Ketchup and Chilli Garlic Sauce.

Small Green chilies paste, 1 Tablespoon
Small fresh green chilies, 3 to 4
Star anise, 8 to 10
Cinnamon, 3 to 4
Black pepper whole, 1 Teaspoon
National Biryani masala, 1 packet
Yogurt 1 cup
Zarda color ½ Teaspoon
Fresh coriander 2 Tablespoon (Finely chopped)
Fresh mint 2 Tablespoon
Tomato slices 1 (for biryani layering) must add these for adding rice
Oil 4 to 5 Tablespoon (this will come on top of rice after they are added to gravy)

Rice Boiling Method:
Water 3 liters
National Salt 2 tablespoons
Oil 3-4 tablespoon

Add water, salt and oil in a pot and add rice when water starts to boil. Boil rice until 3/4th done.

METHOD
1. Heat 1 cup of oil in a pan, add tomatoes, National Bombay biryani Masala, garlic ginger paste, chili paste, star anise, cinnamon, whole black pepper, fresh chili, potatoes, and water. Cook for 10-15 minutes.
2. Stir gravy well with spoon until tomatoes are completely mashed.
3. Now add chicken, yogurt, and color. Cook it for further 5 minutes.
4.Add this stage, add coriander, mint leaves and tomato slices as a layer on your chicken gravy and then layer with boil rice.
5. Drizzle oil on top and steam cook for 10-12 minutes.
6. Delicious Daighi Style Bombay Biryani is ready!

Ingredients
Step 1:
soak in water:
chicken whole without skin, 1kg to 1.2 kg
National Salt 2 tablespoon
National vinegar, 50 ml
water as required

Step 2:
For chicken marination:
National Red Chili Powder, 2 Teaspoon
Red Chili Crushed, 1.5 Tablespoon
National Cumin Crushed, 2 Teaspoons
National Garam Masala Powder, 1 Teaspoon
Red Orange Color, Half Teaspoon
National Ginger Powder, 1.5 Teaspoon
National Garlic Powder, 2 Teaspoons
Oil, 50 ml(for marination)
National Vinegar, 40 ml
Yogurt, 50 gm

Method:
Make cuts on chicken and soak in a bowl with salt, water, and vinegar for 30 minutes. (Make sure that chicken is completely soaked in water)
After 30 minutes take out the chicken and prepare the marination.
Put all the ingredients for marination in a bowl and make a thick paste.
Marinate the chicken in this paste and keep in fridge overnight.
Heat oil in a wok and deep fry chicken for 20- 25 minutes on low flame.
Take all the remaining paste that was left in the bowl and in the wok in a frying pan and sauté until water dries and oil separates from masala.
Serve your chicken with this fry masala paste

Mutton boneless 500 gm 
Ginger paste 1 tbsp

National Bombay Biryani Masala 3 tbsp 
COOKING 
Marinated mutton 500 gm 
Water 1 liter 
Oil ¼ cup 
Yogurt 1, ½ cup 
Green chili big slices 1 large 
Ginger julienne 1 tbsp. (for cooking) 
Fresh coriander for garnish 
Ginger julienne for garnish 
METHOD 
1. Marinate mutton with ginger, garlic and National Bombay Biryani Masala and put in fridge for 2 hours. 
2. Now put marinated mutton in a pan, add water and cook until it boils. Then cover it and let it cook for at least for 45minutes (or until it is fully cooked). 
3. Now mix mutton well and dry out all the water. 
4. Add oil, yogurt, green chili and ginger, and sauté for 2-3 minutes until the gravy thickens and oil separates. 
5. Garnish with coriander and ginger and serve piping hot.
