Ingredients for Kachori Dough:

  • Maida.                                 ½ kg
  • Salt                                       ½ tsp
  • Desi Ghee                           2 tbsp
  • Water                                  1 ½ cup
  • Oil for frying


Ingredients for Kachori Filling:

  • Boiled Channa Dal                 1 cup
  • National Achar                        2 tbsp


Ingredients for Aloo Tarkari:

  • Boiled potato                          ½ kg cut roughly into small size cubes
  • Sabut Zeera                            1 tsp
  • National Haldi                          1 tsp
  • National Salt                            1 tsp
  • Red chilli flakes                        2 tsp
  • Water                                      1 – 1 ½ cups
  • Oil                                            ¼ cup


For Kachori Dough:

  • Take a large bowl, add flour, salt, ghee and add little water at a time
  • Knead the dough
  • Cover and keep it aside for 25-30 minutes

For Aloo Tarkari:

  • Preheat a pan, add oil and add sabut zeera, crushed red chilli , National Haldi and sauté the spice for 30 sec
  • Add boiled potatoes, National salt and water
  • Stir constantly and cook for 2-3 minutes

For Kachori Filling:

  • In one cup of boiled dry Dal, add National Achar
  • Grind them, but keep thick (don’t make it a paste)
  • Now take one dough ball and flatten with the help of your fingers or rolling pin
  • Add 1 tsp of Achari dal stuffing and make Kachori
  • Preheat oil in a wok and fry the Kachori till it turns golden brown

Serve with Aloo Tarkari.
