Ingredients
Ingredients for National Achari Palak Paneer:
- Palak, washed & roughly chopped 2 kg
- National Ginger Paste 1 tsp
- National Garlic Paste 1 tsp
- National Vinegar 1 tsp
- Mustard Seeds ¼ tsp
- Fenugreek Seeds ¼ tsp
- National Dry Fenugreek Leaves 2 tsp
- Fennel Seeds ½ tsp
- Red Chilli Flakes 1 tsp
- Cumin Seeds 1 tsp
- Onion Seeds ½ tsp
- National Haldi Powder ½ tsp
- National Salt as per taste
- Kala Namak ¼ tsp
- Sugar 1 tsp
- Soft Cottage Cheese ½ cup
- National Achar 2-3 tbsp
- Oil 2-3 tbsp
Ingredients for Achari Qeema
- Mutton mince 300 g
- Onion, chopped 2 tbsp
- National Garlic Paste 1 tsp
- National Ginger Paste 1 tsp
- Green Chilli chopped 2 tsp
- Yogurt 6 tbsp
- National Salt as per taste
- Fresh Coriander Leaves, chopped ¼ bunch
- Fresh Mint Leaves, chopped ¼ bunch
- National Achar 2-3 tbsp
- Oil 3 tbsp
Ingredients for Paratha Dough:
- Maida ½ kg
- Salt ½ tsp
- Whole Cumin 1 tsp
- Water
- Desi Ghee for frying paratha
Method
Method for National Achari Palak Paneer:
- Heat oil in a pan
- Add ginger, garlic paste and sauté
- Add cumin, red chili, mustard, onion seeds, fenugreek seeds, fenugreek leaves and stir for 1 minute
- Add haldi and sauté for 30 seconds
- Add spinach and cook on medium to high heat for 7-8 minutes
- When it’s dry add sugar, vinegar, kala namak and National Achar and cook for 1 minute
- Turn off the heat add soft cottage cheese
- Mix gently
Method for National Achari Qeema:
- Heat oil in a pan
- Add onion and sauté
- Add ginger, garlic paste and cook for 1 minute
- Add mutton mince and stir well
- Add salt and yogurt and cook on low flame
- At the end add green chilies, coriander leaves, mint leaves, National Achar and cook for 1 minute
- Turn off the heat and cool it down
Method for Paratha:
- Place the flour, salt, cumin in a large mixing bowl
- Add little water at a time and knead the dough until smooth
- Cover the dough and leave for 30 minutes
- For paratha, divide dough into small balls, flatten with the help of rolling pin
- Place national achari palak paneer stuffing/ national achari qeema on half side of flatten dough and cover it with the other empty half
- It will look like a semi-circle paratha
- Place paratha into the pan
- Leave for couple of minutes to cook
- Add desi ghee on top and flip over and cook for another minute
- Cook until golden brown from both sides
