Ingredients

  • National Chat Masala 1 pack
  • Semolina ¼ cup
  • Maida 1 cup
  • National Salt ¼ tsp
  • Baking Soda 1 tsp
  • Water for making a stiff dough
  • Oil for frying puri
  • Boiled Desi Channa 2 cups
  • Boiled Potato, cut in cube 2 cups
  • Boiled whole green mong daal 1 cup
  • Pomegranates 1 cups
  • Crushed papri 2 cups
  • Dal moth nimko 1 cup
  • Hari chutney
  • Yogurt. ½ kg
  • Sugar. 4-5 tbsp
  • Salt. ¼ tsp

Ingredients for Aloo Bukhara & Imli Chatpati Chutney:

  • Aloo Bukhara pulp 2 cups
  • Imli pulp 1 cup
  • National Salt as per taste
  • Sugar 6-8 tbsp
  • National Chilli Powder ½ tsp
  • National Chat Masala 2 tbsp
  • Vinegar 4 tbsp
  • Cumin, roasted & crushed 1 tsp
  • Melon seeds 1 tbsp
  • Kala namak ½ tsp
  • Red food color 2-3 drops
  • Water 2 cups

Method

Method for Chutney:

  • Add all ingredients in a sauce except red color, vinegar, melon seeds
  • Cook till sugar dissolved and sauce should be slight thick
  • Add vinegar, melon seeds and red food color
  • Cook for 1 minute
  • Turn off flame allow to cool and transfer chutney to airtight container
  • Store in refrigerator

(taste for sweetness and add more sugar if you want make sweeter chutney.)

 

Method for Gola Chana Chaat:

  • In a mixing bowl add flour, semolina, salt, baking soda and mix well
  • Add little water at a time and knead a stiff dough
  • Cover with damp cloth for 30 minutes
  • Divide dough into 4 pieces
  • Roll each dough with the help of rolling pin
  • Make 3 inch round puris by using round cutter
  • Heat oil in a deep wok & fry till crisp & golden brown
  • In a mixing bowl add yogurt, salt and sugar, stir well
  • Make a hole in fried golgappa
  • Add papri, channa, aloo, National Chat Masala, add green mong dal, add sweet yogurt, aloo bukhara chutney, green chutney, add Dal moth nimko and pomegranate seeds
  • Serve
