Koila White Biryani

Ingredients

For the Paratha Dough:

  • Rice 500 Gm
  • Potato Cubes 2 Medium
  • Oil 1 ½ Cup
  • National Ginger Powder 1 Tsp
  • National Garlic Powder 1 Tbsp
  • National Cumin Seeds 1 Tbsp
  • National Salt 1tbsp. (Or As Required)
  • National Garam Masala Powder 1 Tsp
  • Small Green Chili Paste 2 Tbsp
  • Onion Puree (Boil and Grind Onion) ½ Cup
  • Curry Leaves 12 – 15
  • Green Cardamom 3 – 4
  • Black Cardamom 2
  • Cinnamon Sticks 3 – 4
  • Cloves 8 – 10
  • Star Anise 3 – 4
  • Whole Black Pepper 8 – 10
  • Bay Leaves 2
  • Chicken Powder 1 Tbsp
  • White Pepper Powder 1 Tbsp
  • Yogurt 1 ½ Cups
  • Water 2 Cups
  • Fresh Coriander (Chopped) 2 Tbsp
  • Mint Leaves (Chopped) 2 Tbsp
  • Green Chili (Small) 4 – 5
  • Kevra Essence, Few Drops
  • Oil 3-4 Tbsp

Directions

  • Heat oil in a pan and fry all whole garam masalas for 15-20 seconds. Then add curry leaves and fry for 10 seconds.
  • Now add ginger powder, garlic powder, green chili paste and onion puree and fry for 1-2 minutes.
  • Add potatoes, chicken powder, garam masala powder, salt and white pepper and mix well.
  • Add water and cook until potatoes are at least 80% done.
  • Now add chicken and yogurt and cook for 2-3 minutes. Then cover and cook for a further 5 minutes
  • Put a piece of coal on gravy, cover and give smoke for 2 minutes, then remove. (Note: for coal smoke, put a small piece of Aluminum foil with coal inside, and drizzle some oil on top of it. Cover the lid).
  • Add chopped coriander, mint, and green chilies on top of chicken gravy and layer with boiled rice. (To boil rice, take water in a pot, add salt, oil, and put on boil. once it starts boiling add rice until 3/4th done)
  • Sprinkle oil and kewra essence over rice. Add the coal in foil again at this step to infuse the rice with smoke. Cover the lid immediately and steam cook rice on a low flame for 10 to 12 minutes.
  • Take out the coal piece, garnish with fried onions and coriander and your Koila White Biryani is ready!


note: if you want to make biryani without coal smoke, then skip coal smoke part in both steps.
